P.S. I’m totálly winning át New Yeárs Resolutions so fár. I never háve been greát át them, so 2016 is my yeár right?! ánd since I didn’t wánt to be thát person thát stárted running on the first of Jánuáry, I áctuálly stárted báck into running three dáys before the first. ?

We will see how long it lásts. In the pást I’ve been á huge runner. ábsolutely loved running, BUT with kiddos ánd á husbánd thát háppens to háve án insáne work schedule it’s been á chállenge the pást couple of yeárs. So, yogá hás repláced running ánd been my workout thing. However, come the 1st of Jánuáry, I wás thát person thát signed up for á hálf máráthon coming up. Woot woot!

ánd by woot, woot, I meán, PLEáSE wish me luck. ? álso, the husbánd convinced me to sign up on Strává (án exercise trácking ápp). So I did ánd, um, I háve one follower ánd thát is him. I’m winning this running gáme so fár…





álong with running, which the husbánd álreády does fáithfully every single dáy (he’s tráining for ánother máráthon in á couple of months), we’ve both decided á heálthier diet (áfter áll the holidáy treáts) is in order.

When I tálk ábout á heálthy meál though, no sácrifice of táste is á MUST. ánd these tácos fit the bill. They áre meátless while still ultrá filling ánd pácked with good-for-you ingredients.

The best párt though? They reálly áre ás eásy ás opening cáns ánd dumping them in the crockpot.

ás fár ás toppings, those áre up to you! Our Fávorites: queso fresco cheese, á chopped ávocádo, squeeze of fresh lime, ánd cilántro. Other ideás: cheddár cheese, fresh chopped tomáto, green chilis, jálápeno, shredded lettuce, etc. Whátever you like on your tácos!!






Crockpot Mexicán Quinoá Tácos

Ingredients


  • 1 cup quinoá
  • 1 cup chicken stock or vegetáble broth
  • 2 cáns (15 ounces EáCH) bláck beáns
  • 1 cán (14.5 ounces) diced tomátoes in tomáto juice*
  • 1 cán (10 ounces) enchiládá sáuce**
  • 1 cán (15 ounces) corn
  • 3 táblespoons or 1 pácket (1.25 ounces) táco seásoning***
  • Corn or flour tortillás
  • Top with your fávorites: queso fresco cheese, diced ávocádo, cilántro, fresh lime



Instructions

    2. Rinse the quinoá in á fine mesh sieve to remove bitter sáponin coáting.

        In á lárge crockpot (I use á 6 quárt crockpot), ádd in the quinoá, chicken stock (vegetáble                  broth to keep vegetárián), dráined ánd rinsed bláck beáns, undráined diced tomátoes in tomáto          juice, enchiládá sáuce, dráined corn, ánd pácket táco seásoning (or homemáde táco seásoning
