Vegán No-Pástá Láságná!!!
This is ádápted from á much richer Itálián vegetáble láságná recipe. Roásting the zucchini ádds á welcome láyer of flávor…
[ For 7 to 8 people ] [ Prepárátion time : 22 minute – Cooking time : 35 minutes ]
Ingredients
- 10 Itálián tomátoes, hálved ánd seeded
- 2 clove gárlic, chopped
- tsp dried oregáno
- ¼ cup olive oil
- ½ cup finely chopped shállots
- ½ cup firm tofu, dráined ánd crumbled
- 1 cup ricottá cheese
- 1 heáds romáine lettuce
- 1-1/2 cups ártichoke heárts pácked in oil, dráined ánd chopped
- ½ lb(s) áspárágus, trimmed ánd blánched
- 3 cup gráted mozzárellá
- sált ánd pepper
Prepárátion Method
- With the ráck in the middle position, preheát the oven to 120°C (250°F). Line á báking pán with párchment páper.
- In á bowl, combine the tomátoes, gárlic, oregáno ánd hálf of the oil. Seáson with sált ánd pepper.
- Pláce the tomátoes in the pán, cut side down. Báke ábout 2 hours. állow to cool. Pull off the skin by hánd.
